Courgette tart
Ideal for picnics, lunchboxes etc and tastes great at room temperature. Add bacon or feta for a tasty alternative.


2 tablespoons oil
1 finely chopped onion
2 cloves finely chopped garlic
4 - 6 finely sliced courgettes
1 teaspoon dried oregano
eggs
1 cup milk
salt and pepper (to season)
1/2 cup grated tasty cheese


Preheat oven to 180°C. Heat oil in a pan and gently cook the onion and garlic until just tender. Add courgettes and oregano and cool for a further minute.

Whisk eggs and milk together and season with salt and pepper. Mix together the courgettes, flour, egg mixture and cheese.

Pour mixture into a greased 22cm round pie dish and bake in oven for 25 to 30 minutes. Stand for 10 minutes before serving.

Preparation time: 20 minutes.
Cooking time: 45 minutes.
Total time: 65 minutes.
