pumpkin
The bright orange color of pumpkin tells us that it is loaded with an important antioxidant, beta-carotene (as found in carrots). Beta-carotene is one of the plant carotenoids converted to vitamin A in the body. In the conversion to vitamin A, beta carotene performs many important functions in overall health.

Not only is the flesh and skin when cooked well but the pumpkin flowers are also edible.

In some countries where the pumpkins are grown in large fields they are actually grown as feed for livestock such as cows and pigs.

Native Americans used pumpkin seeds for food and medicine and pumpkins were once recommended for removing freckles and curing snake bites.
